Our past 2 months in a long winded summary...

Okay, so I know it's been 2 months since our last post.  SORRY!  Life has been a little crazy.  I'm going to give you the highlights, as much as I can type out in this next hour.  I'm home alone this weekend while Dave is out screening for Dr. Drew and Lyra in Wisconsin.  I've been focusing on cleaning up our apartment further, throwing out/donating anything we don't absolutely need and packing up what we're going to keep.  We move next month!  More details on that a little lower in this post.  First, I want to talk about some of the exciting stuff we've been up to since the end of May!

My last post was on the day of Dave's Part 4 National Boards exam, his last national test!  We found out two weeks ago that he PASSED!!  Yay!!  He can officially become a doctor on November 12th I believe, just before graduation on Nov 19th.  This is very exciting for us as it means we can get started right away with training after Nov 19th thru Maximized Living.  Congrats to Dr. Dave!!  :)

On May 28th, Melissa and Paul (on of my FAVORITE families that I nanny for) gave us two Twins tickets since they'd be out of town.  We were so excited to go to a game!  We hadn't had the opportunity, so thank you Edlunds!  It was at the new Twins stadium -- it's beautiful!  So glad we got to see the stadium before we leave the Twin Cities.  The Twins won that game, forget the exact score, but it was an exciting game!  Here are a few shots:


The next day, we hit the road with Mark and Nicole for some wine trailing.  We'd been wanting to go wine tasting in Minnesota for a couple years, and we finally made it happen.  And what a great couple to go with!  Had such a fun time!  We followed the Great River Road Wine Trail.  We went to four different wineries and vineyards, tasted a lot of great local wine, and picked up a few Christmas presents along the way.  ;)  The best part was our final stop at Valley Vineyard in Prescott, WI.  Rudy and his wife Cathy were SO sweet!  We arrived at a very quiet time in the mid-afternoon.  Not only did we get healthy sample portions, but Rudy actually took us down to the wine cellar that he built and showed us all of his equipment, how he makes the wine and how he bottles it.  It was all so interesting, something Dave and I are hoping to have the time to do in the future.  It sounds like a lot of fun!  And like Rudy said, you have all the power and can control how your wine tastes.  If you think it needs to be sweeter, change it.  Want to add another flavor, adjust the grapes used.  SO COOL!


Then, on June 11 & 12 was Create Your Destiny.  I think I wrote about the seminar last year..?  Dave is organized it again this year.  Create Your Destiny (CYD) is a group of student leaders from all the clubs on campus.  They pull together to put on this huge event once a year for the students where they bring in chiropractic leaders to speak on an array of topics to motivate and instill holistic principles in the students.  Their mission statement is:  "To empower, inspire, and to motivate students to realize a more profound meaning and purpose to their personal and professional lives. Our vision for the students at Northwestern is to increase certainty in chiropractic philosophy, awareness of business management, and leadership within a principled chiropractic model."  This year they brought in 10 leaders in chiropractic and business.  What a powerful weekend it was!!  Even though the event is over, check out the brochure from CYD and see all the hard work Dave and the committee put into it.

The next weekend we were off to Drew and Lyra's in Wisconsin to spend the weekend with them and their family.  It's been on the To Do list for like..a year.  :)  Saturday was their Patient Appreciation Potluck day, so we helped out a little with that on Saturday.  Got to sample many delicious Maximized Living recipes, so you know I was in Heaven!  I definitely dropped the ball and didn't make anything to share.. I had a late night before babysitting.  But it was fun to taste others creations!  After the potluck we headed out for a hike and were treated to an amazinggggg Parmesan Artichoke Chicken dinner by Lyra!  So so so good!!  This is a picture of Lyra's Healing Deep Dish Pizza.  It was the best healthy pizza I've had in a long time!  Somehow I didn't save any pictures of their 3 adorable children..


On Sunday we headed to church with the fam then made it back to the Cities to meet Diane and Kevin for lunch at Ecopolitan, a raw vegan restaurant in Uptown.  It was Diane & Kevin's first time to try Ecopolitan and they loved it!  Diane and I had been planning that date for at least a month...probably more like 2 months.  It was a beautiful day, so we sat outside on the front porch.  And the food was FABulous!  We were all stuffed by the time we left, and I couldn't even finish my portion.  I highly recommend trying Ecopolitan if you visit TC!  I thought I had a picture of us by the Ecopolitan statue thing, but I can't find it...something weird is going on with my camera..hmmmmm.

And then we come up to the end of June.  We've been trying to figure out where we want to move..to live and raise a family, to open our chiropractic health center.  We weren't very satisfied with any of the midwest cities we visited (besides Omaha, but it sounds like that city is closed off thru Maximized Living right now), so we started looking to the East Coast.  From the beginning, Dave has felt called to the East, so I trusted the process when all the midwest cities kept falling thru.  Right now we're putting all our trust in God to guide us to the city he wants us in.  We decided to pick the best city, we needed to drive out and see the coast in person.  So we planned out another road trip, half as long as the one we took April last year.

We started our trip visiting my aunt Ruth in Maryland/Washington DC area.  We spent two days with her.  She was so sweet to tour us around DC.  It was Dave's first time seeing the monuments and memorials, so we made sure to hit up all the main ones.  However, it was during a heat wave, so we decided to go out at night the first day to see the White House and Capitol building.  It also helped because there were fewer tourists out at night!


The next day (Saturday) we hit up a few of the Smithsonian Museums.  If you've ever vacationed with us, you know that Dave LOVES museums.  If we're with someone, I usually try to avoid museums at all costs..  I'm talking HOURS spent reading every single little placard.  Not saying it's a bad thing, but I wish I was that interested in, say, mummies or WWI.  :)  hehe  So Ruth and I had a relaxing time in the AC while Dave learned a little about a ton of stuff.  It was also fun walking around down town DC.  They had a seafood fest and BBQ block party going on.  They were also setting up for the 4th of July festivities the following weekend. 



After visiting Ruth and Maryland, we headed south down to North Carolina.  That same day we found out Dave passed his Part 4 Boards AND that he scored high enough to be licensed in North Carolina.  Praise the Lord, because otherwise we were going to drive straight thru the state.  We did a zig zag pattern thru the entire state, because Dave felt in his heart that was the state we were meant to be in.  I can't say enough good things about the entire state!  We mostly camped along the way, but also stayed with some doctors that we visited.  We LOVED Greensboro, Winsten-Salem, High Point, Asheville, Wilmington, and a few other cities.  Down in Shallot, we took some time to hit up the beach since it's right on the coast.  GORGEOUS!!!  I could definitely live by the ocean and have that to look forward to every morning.  :)!  Funny thing, when I got up to jump in the water, I returned to find the ONLY towel I brought on the trip was pooped on by a stinking seagull.  And it was only half way thru the trip, still had 5 days to go!  haha, thankfully my husband is the most thoughtful man alive and volunteered to use my towel for the rest of the trip.

Out of all the cities, our absolute favorite was Asheville as the city is a "crunchy" city, meaning it's organic, green and natural!  We figure why not move to a city that is years ahead of the rest, right?  So Asheville is ranking high for us right now.  We still have to do some more demographic/entrepreneurial research on the cities to see which will be the best fit for us, but we can definitely see ourselves being happy in Asheville from a personal and family standpoint.  Also, some of you saw on Facebook that we helped out a lady who was involved in a hit and run accident in Asheville.  We were just casually driving thru some side streets, checking out the residential area of the south side of town.  This lady was crossing the road in her vehicle right in front of us (with plenty of time, we were a few hundred feet away driving slow) and out of no where this other woman guns it from the other side of the street and hits this lady on the driver's side door.  It's like she didn't even look, just peeled out!  Then she proceeded to drive off with her front wheel bent in at like 60 degrees.  Let's just say she didn't make it far, another witness to the scene followed her and took down her info as we found it out later.  But luckily Dave and I were there to block off traffic.  Dave had recently completed his first aid certification, so he checked the lady out and made sure she was okay, the scene was safe, all that.  Dave got the street clear and moved the car out of the way.  I must admit, it was pretty scary to see an accident happen right in front of us, let alone to have the crazy woman drive off.  But we were able to help the woman who was hit, and of all things it was her birthday!  We helped her talk to the police and waited with her til her family came.  It made our day when she said thank you and gave us hugs! :)

And that was enough excitement for us in Asheville.  After North Carolina, we headed down to South Carolina and really fell in love with Columbia, SC.  Then on the last couple days of our trip we headed to Knoxville, TN and also fell in love.  Knoxville's green movement has been growing over the last 10 years, it's more prevalent there than it is in Minneapolis!  So we feel we could be very happy there.  We had fun walking up and down their main streets spending time in all the little shops talking to locals.  On Saturday they held their weekly farmer's market, and although we didn't have cash to enjoy all the fresh goodies, we made some connections with local farmers and got a good perspective of live in Knoxville.  It was a blast!


After Knoxville, we headed home, 16 hour drive ahead of us.  That was on the 4th of July, so the drive home we got to see a few fire works shows.  It was pretty cool!

So we've been getting the questions already, based on the trip, where are we going?  What did we decide?  Well at this point, we only know the state for sure.  North Carolina.  We are starting the application process for licensure for Dave now.  He'll have to take a basic test for that this fall as North Carolina has it as an extra requirement.  Shouldn't be a big deal, just a basic entrance exam so they can make an extra couple hundred bucks off of doctors.  We're going to continue to research cities on our list, we've ranked our top choices and are working with Chamber offices to narrow down on THE city.  Asheville is #1 as of now.  We will keep you posted as our decisions are made and the time line ticks down.  We plan to be open in whatever the city around this time next year!

Well, that's it, I think I got thru it all.  The past 2 months in the lives of Dave and Elise!  Hope it wasn't too long for you, thanks for sticking thru it all and making it to the end!  If we haven't heard from you in a while, or more so you haven't heard from us (like I haven't called you back yet Alanna or Ashley or Janeeeelle), please write us!  Email is the best right now!  Hope everyone is enjoying summer, now that it's finally here!  Happy belated 4th!  Will write more soon!

You know it's springtime when...

Cannot believe it is half way thru May already!  We're finally getting some nice, sunny warm weather here in the Cities after about a week straight of 40's/50's and rain..non-stop rain.  Looking off our deck now, everything is really greening up!  You know it's spring when you have a robin's nest full of babies in the tree just off your deck...they're chirping happily now! :)  Spring is fiiiinally here!  I'm taking some ME time today while Dave is off taking his Part 4 National Boards.  Yup, that's right folks, Dave's taking his LAST PART today!!  So exciting!  He's been studying like crazy the past few weeks and if all goes as planned, this will be the last exam he has to take for the rest of his life!  Wahoo!  Four years of hard work is coming to a close and we cannot wait.  [We also got Dave's Part 3 scores back a couple weeks ago and he passed all of those tests with flying colors.]

While Dave's been off studying at Perkins, Caribou and the beach, I've had some extra time on my  hands.  So I've finally [finally] starting working on my scrapbooking again, primarily starting our wedding scrapbook that I've been putting off for going on 2 years.  Dave insisted on taking this somewhat unflattering photo...showing off one of my page creations among the crafting mess.


Also just a couple days ago I decided to go ahead and start an herb garden this year.  I was going back and forth on the idea just because we'll be moving around so much come July/August..but I have been in need of more hobbies lately so I decided to go for it and have my seeds sprouting outside right now!

You know it's spring when your friends are popping out babies -- it seems there's a huge surge of births in the spring.  Anyone else agree??  There is another baby arrival to announce:  Eleanna Joy Hokenson, second daughter to Alanna and Tony!  So this is Teija's sister!! :)  We can't wait to meet this little angel later on this summer!!  Alanna made this headband in the picture, so talented!

At work, we dedicated the month of April to our health and lifestyle makeover series called Rev It Up.  Dave presented on the last night on a highly efficient form of exercise called Burst Training.  I took some video, but have to find the Flip to get it on our computer..will post those later.  Everyone LOVED Dave (as always) and we had a huge burst training club session the following weekend which spilled over from Rev It Up.  We get so excited to help people get healthy!  Here are a couple pictures of Revolution's "office cutie," as we've labeled her.  Her name is Sophia and she is a sweetheart!  If you can see her chocolate mustache, it's from the Raw Chocolate Pudding I made to share for the Recipe Night at Rev It Up.  She loved it!  [This is Sophia's excited face.]


You also know it's springtime when the wedding and graduation invitations begin to arrive.  Phew, this spring/summer is going to be a packed one for weddings!!  We recently attended Nick and Megan's wedding in St. Cloud.  Upcoming ones include Katie & Tom, Suzy & Rob, Cassie & John and Mike & Lori.  More might be coming, you never know!  As of now, none of their dates overlap, so we should be able to make it to all!  :)!!  Here are a couple pictures from Nick & Megan's Day!  [I didn't get any of the ceremony, we were sitting in an awkward spot for shots with our simple camera.]

Spring Time Changes and Growth!

Philippians 3:10-12 (NIV)
I want to know Christ and the power of his resurrection and the fellowship of sharing in his sufferings, becoming like him in his death, and so, somehow, to attain to the resurrection from the dead.  Not that I have already obtained all this, or have already been made perfect, but I press on to take hold of that for which Christ Jesus took hold of me.

I absolutely love spring time, the changing seasons, the flowers and grass, the return of birds to the sky and trees.  I also love to read thru the Easter scripture and reflect on it, what it means to me, to us.  Philippians 3:10-12 is the part that really jumped out at me today.  It is everything Dave and I have been trying to say and to do for so long, and will continue to do.  I think it applies to a lot of you who read our blog and you will find hope and encouragement thru rereading that verse.  Happy April 1st!  Celebrate Spring!  Celebrate all that He has done for us!

Dave said his Part 3 Boards tests went, to quote him, "Alright."  Sooo, we'll have to wait and see when that little white envelope comes to our door with his scores..  I know he did fine, but he and his buddies were a little nervous about at least one of the sections as it was a bit harder than they anticipated.  Thanks everyone for your prayers and encouragement again!  Every little bit of support helps!

Last weekend, actually it was longer than just the weekend, he was gone for 6 days -- Wednesday thru Monday -- to a Maximized Living Training Camp in Florida.  He and 5 of his guy friends from ML drove down for Florida in an old van which I think they borrowed from another friend.  Why did they drive down you might ask?  Because it happened to be Spring Break weekend and ticket prices TRIPLED the norm, reaching over $800 a person, normally around $150-$250.  Cost to ride down with 5 other people in a van?  $65 each round trip.  Yup, that's why.
This was Dave's second time going to a Camp since he came to chiro school and both experiences have been so amazing for both of us.  He comes back a changed man (for the better) each time.  At the camp, the coaches help you to break down, leaving your weaknesses and inseurities behind.  And their slogan is "What happens at camp, stays at camp" (much different than the similar Vegas tagline..), meaning not even I am allowed to know what went on a camp or what the issues were.  All I need to know is Dave comes home a stronger, more powerful husband and doctor each time and that helps me to likewise be stronger and more powerful to save MORE lives in my community.

Now Dave transitions into Finals WeekS (big "s" because finals are this week AND next week, hence we have to stay around here yet again for Easter so the guys can study together).  On top of more studying, yesterday he co-hosted an event for their Maximized Living club called "Dinner With the Docs".  He and Vernon organized the event for students.  They brought in three super successful doctors from the Cities to speak, to tell their chiropractic stories (mistakes they made, where their passion comes from, why we do what we do thru Maximized Living) to encourage students who are not already ML members to join, come to the next seminar, that sort of thing.  Unfortunately I couldn't be there (I'll explain why next), but I think Dave said they had a huge turnout of 30+ non-member students (give or take a few because I can't remember the exact number).  So that was really great!  Dave was very happy when he got home with how everything went.  The students were impressed by the doctors' stories and many had signed up by the end of the night.  A great night for the ML club!

Here's what's been happening in my life lately...It’s been kinda nuts.  Dr. Suzy was in a car accident last week (she’s okay, but was injured pretty badly and still cannot adjust patients for 2 more weeks minimum), so I’ve had to kind of carry on more responsibilities of the practice.  Christina is almost ready to have her baby (due on April 10th) so she will be leaving shortly as office manager -- have to learn so much yet before she is gone!  We have also recently undergone a complete software switchover to a much better, more efficient system, and while it’s better for us on the office managment side, it’s very new and confusing for patients.  We are also in the midst of hosting our bi-yearly health & lifestyle makeover series called Rev It Up!, so I have been doing a ton of marketing and prep work for that.  Basically my life has been Revolution Wellness Center 24/7 for the past few weeks...many extra hours put in to make sure everything is going great and the patients hardly notice all the drama.  :)  Oh the life of a Chiropractic Assistant!  haha  So that is why I ended up missing Dave's dinner event.  Haven't been getting home until 9/9:30pm most nights lately.

I'm taking some ME time this morning before heading out to babysit for some adorable kids at 12noon.  It's already 60 degrees out, so I'm confident it will be shorts weather by the time I need to hit the road.  I think we'll be doing some walking, biking and other out door fun this afternoon!  :)

Good luck to Dave!

Dave is in the midst of Part 3 Boards right now.  Yesterday he had two tests and Sunday he will have two more.  He said yesterday's tests were okay, with the second one being harder.  He's out studying today with Vern and whoever else joined them.  Good luck boys!!  I know you'll all do great!  Please pass along your support for these guys.  They're almost officially doctors!  May will be their final round of testing and *finger crossed* after that it will be official!  :)

Today I think I'm going to go get my hair chopped off at my friend Carri's house.  I tend to do this every spring after getting sick of my poker straight locks...  Once the snow's melted and it's sunny out, I always feel like it's time for a new look!  So that's my plan for today.  Then I'll be focusing on getting some recipes posted on Healing Cuisine from our dinners this past week.  I am always taking pictures of our food now!!  haha  Except this morning, I forgot to take a picture of the zucchini and spinach omelet I made for Dave... It was so good.  Would have been a good breakfast post..oh well.  I'm excited to post a yummmmy salmon dish I concocted with fresh ginger and pepper.  One of the best salmon dishes I've ever had!

I'm looking out our deck doors right now and it is SO GORGEOUS outside!  I can't wait til Dave gets home so we can go play outside!  Either a walk or a bike ride tonight I think.  Can't pass up this bright sunshine and warmer temps!  Beach season is on the way! :)

It's About Time

Well folks, it's about time for a post I think!  Sorry it's been so long..we've kind of had a busy past few weekends, which is when I usually try to start a blog post, and I have been unmotivated to write over my lunch hours at work.  But, today's the day!  I am actually home resting up this morning.  I usually nanny before work on Tuesdays but I came down with this minor chest/throat/cough thing, so I'm hanging out in bed for a few hours to hopefully let my body fight it off!  I have my Oil of Oregano, Flu Terminator, Apple Cider Vinegar and Ginger Tea and 2 glasses of water at my bed side.  I love natural remedies!  Starting to feel a little better already!

Chris is here visiting us today and tomorrow.  He got here yesterday evening just in time for dinner.  Just hung out at home last night with some wine, CSI Miami, and complimentary adjustments.  It was nice.  Tonight we're going to check out this club called the Fine Line Music Cafe for free music, food and drinks.  Looks a nice, chill place.  Chris actually found it via a Google search for stuff to do around here.  Good find!

So let's see, what's been going on these last few weeks?  We've both been doing a lot of babysitting.  Dave's been helping me out taking on some of my jobs when I've been helping out other families.  Might as well, right?  We both have so much fun with the kids, and the extra cash always helps week to week.

Dave has his Part 3 Boards coming up on the weekend of the 19-21.  Please wish him luck!!  He's half way thru, having passed Parts 1 & 2.   Just 3 & 4 left!  He will be graduating in November!!  Can't believe it!  We are so excited!! :)

The weekend of February 20th, we drove out to Wisconsin Dells to meet my college friends Amber & Lucas and Katie and Alejandro.  We stayed at the Wilderness Lodge for a weekend of water park madness!  If you know me, you know I can't swim and freak if the water is over 4.5ft.  Yeah, so we spent to days at a water park.  It was insane!  I spent a lot of time on the Lazy River while the others did the huuuuge slides.  But I did finally do some slides toward the end.  They weren't as bad as I expected, but I was still screaming the whole way down.  I think my favorite part was the wave pool.  Even though the waves got really big, Dave kept me safe while I floated around on the tube.  It was fun to rock around in the waves.

On Sunday, Feb 28th, Christina had her baby shower.  She is at 8 months -- we are all getting excited to meet baby Sophia soon!!  Christina's shower was so much fun!  They had a great spread of delicious food, we played baby bingo (a classic!) and the dice game.  I had never played the dice game before, but man it was fun!  I won 5 prizes!  Dave always says we need to go gambling with me...haha!  While we ladies did our thing upstairs at Christina and Paul's house, Dave was down stairs with Paul watching the Olympic hockey game US vs Canada.  It was pretty cute:  whenever the US scored, the boys would cheer and yell and we girls would say, "Oh, the US scored!".  And whenever one of us won something we'd all scream and clap and the guys knew "Oh, someone won a prize again".  It was funny to look back on that.  :)

Now they're ready for Sophia to arrive!  4.10.10 is her due date.  We'll keep you updated on her arrival!

Happy Halloween!

Happy Halloween every one!  We have a new look to our blog as of today.  It was time for a change, after about 2 years into blogging.


No major plans for either of us this Halloween.  Usually we'll at least dress up and go out or hit up a party or two, but this year Dave is out of town.  He's down in Florida for the quarterly Maximized Living seminar.  I am so sad that I missed it this year, but we had a HUGE event finishing up at Revolution that I had to assist in running.  It was a great turnout, packed house, so it was worth it to stick around town for sure.  But I'm disappointed I didn't hop on a plane and get down there for today -- Dave called this afternoon and said he was honored with an award and called up on stage for his outstanding leadership and direction as President for the past year!!!!!  This is a tremendous honor as he was hand picked out of all the presidents from all the schools around the country, AND the ML leaders rarely congradulate students let alone honor them with an award.  I say the first of many!  :)  Sad I missed the big moment, but so excited for Dave at the same time.  Perhaps we'll get a pic up here when he gets home to show it off.


So while I've been home alone this weekend (with the exception of our lovely roommate, Kelly, who is scrambling to get her last-minute costume together right now -- eek!), I've done a little bit of pre-Christmas shopping (for those of you who know why my Secret Friend/Secret Santa is this year, you know why this was the perfect time to do some browsing) and have successfully cleaned our entire bathroom and about half our bedroom.  Needed a break, so thus I am blogging.  My goal is to get it all done before bed tonight.  Then get a restful night's sleep before rising early to pick up Dave at the airport.


Dave got his test scores back from National Boards and bum, bum, bum.... he passed!!  2 sets down, 2 to go!  And he's down to 1 more year of school as of the end of November.  Exciting!!  Can't wait to move, get our office set up, and start saving lives in a new city!


I think that's all the major news for now.  I might pop in a scary movie soon to set the mood while I finish tiddying up.  :D   Don't forget to fall back tonight every one!

A little delayed, but just wanted to let you all know Dave's Part 2 Boards are going on this weekend. He already took two test today and has like 4 tomorrow (Sunday). So shoot him texts and emails of good luck! (don't call cause his phone might ring during his exam...and then he'd be expelled. :)

We *think * we finally have the mouse situation under control, meaning we think they're all done away with. (Angela, you weren't kidding that it would be a hard process! Still want to hear about the flying squirrels though..) Our personal count, to date, is up to 14 mice caught in your every day traps. We've caught about 3 or 4 more since our last post about the whole thing. The exterminator came 2 more times since then, too, and is coming next week to do a final check. He removed a few mice on his own, too, so there were possibly closer to 20 caught and who knows how many that took the poison treats back to the nest and died there (which was in our bedroom wall mind you...it stunk for a few days!). We are so glad to have this taken care of. It became a daily occurrence that one of us would be screaming and running out of a room because we saw a mouse. And now we can go back to vacuuming only once a month if we wanted to, rather than a daily thing! Joy!

That's about all I have time to write right now. Heading to bed soon, Dave's sitting next to me studying, poor guy. It'll be over soon. Have a great rest of the weekend everyone!

Whoops! I forgot to mention one more thing...so real quick before Dave switches for me to drive:

We found out a few days ago that Dave passed his Part 1 National Boards!! :)

He has 3 more parts to go over the next year and a half. He can't wait to be done, but it will come soon enough.

A Fun Week!

Dave survived his first round of National Boards! He finished around 4pm on Sunday. Feels okay about each part and now we wait 6 weeks to see how he scores. Oh the anticipation! :) I know you did great, sweetie!!

We hope you all had a festive St. Patrick's Day! Dave and I actually did a bit of celebrating since Sunday...which we claim is all in honor of the Green Holiday.. haha! On Sunday, we went out with a few other guys from school to unwind and release after their Boards. Nicole was out, too, and we both agreed it is just as stressful being the significant other of a chiro student during Boards time as it is to take the Boards!! (Our small excuse to unwind as well..)

We also went out in honor of St. Patty's Day. We met up with Shane and Nicole and a bunch of their friends from Apple Valley first. Thank you for the pictures, Nicole! It was fun meeting a few new faces and having a weeknight to relax with cool people outside of the school setting.


St. Patrick's Day

Last night was a big night for Dave and the Maximized Living Club. Dr. Pete Wurdemann and the club officers organized an event at PF Chang's Restaurant for all the club members and other student guests. It was a huge success!! Dr. Pete told the group his story, why he's in chiropractic and how he came to have such a successful practice today. He also answered many questions from the students about the transition from student to doctor. Just awesome knowledge. I'm so glad I went and will definitely continue taking advantage of these opportunities! Events like these open the networking door for Dave and me and have already helped us so much for the future of our practice. The knowledge and information that we gain alone is priceless -- something every student needs to learn but often passes up. We're just blessed with these opportunities and can't WAIT to get out there and open our own doors!

Speaking of opportunities within chiropractic, this weekend we're attending an event at Palmer in Davenport, Iowa -- the proverbial birthplace of chiropracic. Dr. Mary Tocco is speaking on "Are Vaccines Safe?" She is a world renowned leader in vaccine and autism awareness, education and research. We'll be recording the talk if anyone would like to hear it! (Do a quick Google on her and see how knowledgable this doctor is!) We are super excited to make the trip to the school and take a tour. It's somewhere Dave and I have wanted to go since he started school last year. We're also taking Nick E and Loretta with us. Should be a fun 6 hour road trip!

So these are the fun parts of our week in a nutshell. Still so much more to look forward to! AND the weather is still nice here! We went out for our first bike ride since NOVEMBER on Monday. Thinking of taking another one for myself this afternoon.. WE LOVE SPRING! Anyone sitting in their office or classroom itching for TGIF yet?

Spring Breakers

Oh. My. Have we been BUSY! So Dave has his first set of National Boards coming up on Saturday/Sunday. (Btw, if you have some time, please send him an email or facebook message to wish him luck! He'd appreciate it!) Like I mentioned before, I've seen little of him for the past couple weeks. This week has been no different, with him studying late into the night with his buddies. There has been busyness in a good way for me though, having taken on three NEW families for nannying in the last week and a half! Which means about $200 more per week! But, it's been keeping me away from home and friends having to spend the extra time nannying. And besides all that craziness, we've had visitors! :)

Joel came to stay with us Friday thru Monday, a little taste of a spring break vacation. Dave and I felt horrible for being so busy during his stay, but we did get the chance to take him out on Friday night for a couple hours. We have had the opportunity to visit with some other spring breakers this week. Eric, Rei, Ish and Aaron have been in the Cities for their break from MTU since Saturday. I had the pleasure of joining them for dinner on Monday night. By the way, I absolutely LOVE going out with these guys because they are just as adventurous as me when it comes to ethnic foods! We had a fun times of cooking meals together while at Tech together. So Monday night, they took me to a Japanese restaurant, and I wish I had gotten pictures or video because it was one of those places where there's a grill right on your table and the chef comes and does a show while he prepares your meals! It was SO cool, way better than seeing it on TV - haha! It was a delicious meal. Dave and I will definitely be going back to that restaurant (whose name escapes me right now...). Thanks for introducing me to a great place guys!

Unfortunately Dave couldn't joint us Monday night because of school, but last night, Wednesday, we arranged another dinner date that actually worked with Dave's schedule. This time, Dave and I picked the destination. So, we picked one of our favorite Indian restaurants called Surabhi. Let me just say DElish! I think we all had our fill and then some last night. I grabbed a few pics with my phone:

** Breaking News ** Laura & Scott reportedly (from Facebook and their own blog) headed to the hospital late this morning. Laura was about 7 days over due as of today, so we're hoping her labor is going quick and easy right now! :) We'll get some pictures as soon as we get to visit Baby H! For now, congrats to the soon to be new mom and dad!!
